Thyme ( Thymus vulgaris ) is a perennial, evergreen shrub native to the Mediterranean region. The resulting essential oil is extracted from its flowers and leaves by the gentle process of steam distillation.

Depending on soil conditions, climate and altitude, fragrant plants develop different chemotypes. There are several **different chemotypes **of thyme essential oil, which differ from each other in chemical composition, resulting smell and possible different action.
Thyme essential oil with the predominant chemotype component thymol is considered the strongest and** most intense type with a wide range of uses. However, this increased efficacy is accompanied by increased dermal irritation** , and therefore great** care **must be taken when using it.
Why red?
Thyme essential oil chemotype thymol can also be found under the name as „red thyme“ . This is because the surface of the metal vessels reacts easily with the phenolic compounds of the essential oil and stains them red.

Thyme essential oil is a natural cocktail of hundreds of biologically active substances. However, the substances called Thymol and **para Cymene **are considered to be the main ones.

To make the flavour of the essential oil stand out in the dish, **we recommend adding it to the finished dish.
